Shut the front door | Raw tim tams + lamington chia pud

Oh haii and happy Australia day y’all! We’ve grabbed our 2 fav Aussie flavours with both hands and revamped them TL style – healthy and loaded with superfoods to rock your bod this long weekend. Move, shake, bend, grind and get your sweat on this Australian day then throw down one of our epic healthy eats to celebrate all things Australian.

Lamington chia pud

  • ¼ chia seeds
  • 1 cup almond milk
  • 1 teaspoon raw cacao
  • Raspberries
  • Coconut flakes
  • Cacao nibs

Throw chia, milk, cacao into jar or container and mix it up and leave it in the fridge. After about 20 minutes give it a stir up so it isn’t all clumpy. Let it set over night and in the morning top it off with raspberries, toasted coconut flakes so it looks schmick,

Want a bit of sweetness? Add a dash of stevia or teaspoon of rice malt syrup when you mix up chia and almond milk.

Raw tim-tam

Say whaaat? Epic and best eaten straight out of the freezer.


  • 3 big heaped tablespoons almond flour
  • 1 teaspoon of cacao
  • 2 big table spoons of softened coconut oil
  • (like it a tad sweeter add 1 scoop of steavia or a teaspoon rice malt syrup)

Middle layer:

  • ½ cup cashews soaked in water or bought cashew butter
  • 1 big teaspoon coconut oil
  • dash of natural vanilla

Chocolate coating:

  • ¼ cup raw cacao powder
  • ¼ softened coconut oil
  • If you’re not hard core and need some sweetener add 1 tablespoon rice malt syrup or 1 scoop stevia)

Mix up all the ingredients for the biscuit layer.

If you’re keen and want to make your own cashew nut butter – Soak the cashews for a few hours, rinse off then in a high speed blender grind them till nice and smooth. You might have to stop, wipe down the sides then blend again. Store bought?! Kudos. Just throw in coconut oil and vanilla and mix up gooood.

In a not stick cupcake liner add biscuit layer – middle layer – biscuit layer. Whack in freezer for halfa.

Once frozen enough mix up raw choc ingredients. Pop the biccy’s out of the liners and coat in the chocolate. Pop them back in the freezer (but on a non stick tray this time or else your freezer will be a hell of a mess) leave for a couple hours and boom. Enjoy a good ol’ tim-tam slam on ‘Straya day.
